how the gammon ham roast is made

Gammon is an English style of ham that is raw and is to be taken home to be cooked. We take specially sourced fresh Australian pork from NSW and QLD that our craftsmen hand trim before it is marinated in our traditional cure. This is an under-processed ham and has a texture closer to a leg of lamb than of your traditional ham but retains a delectable flavour and seriously tender texture. It is then beechwood smoked with solid wood imported from Germany that gives the product its moreish flavour. This is the perfect ham for those Master-chefs at home looking to play with garnishes or to roast it and get a lovely crackling.

shelf life

Five weeks from production provided the packaging is intact and the product is kept below 5°C. Once opened, the product should be consumed within five days.

cooking

1) Preheat oven to 240°C (or 220°C for fan forced). 2) Remove product from packaging. (HINT: for crispy skin wipe rind dry, and coat with salt and oil) 3) Roast for 15mins, then turn oven down to 180°C (160°C for fan forced) 4) Cook for 40mins per kg (or until a core temp. of 68°C)5) Rest for 10mins & remove netting prior to carving
