100% fresh Australian pork, water, salt, Mineral Salts (451, 452), antioxidant (316), Vegetable Gum (412), preservatives (250).

process

These hocks are carefully carved off fresh pork legs by our quality butchers, then marinated for 24 hours to further enhance the flavour and texture. The hocks are then cooked and smoked to give the golden appearance and improve the texture of this popular winter favourite.

shelf life

Three weeks packaged loosely in a plastic bag or eight weeks cryovaked.

cooking

Although the hocks are fully cooked it is normal for them to be further cooked again to be used in an accompanying dish.
