100% fresh Australian pork, water, salt, Mineral Salts (451, 452), antioxidant (316), Vegetable Gum (412), preservatives (250).

process

After the loin is removed from the middle, the belly is deribbed and trimmed, creating the speck. The speck is then formed into an even shape to allow for easier portioning after cooking. It is then injected with our special cure and left to marinate for two days, resulting in quite a unique flavour. The speck is then string tied to maintain an even shape and finally cooked and smoked to complete the process.

shelf life

Eight weeks provided the packaging is intact and the product is kept below 5°C. Once opened, the product should be consumed within five days.

This is a fully cooked product which can be consumed either hot or cold.
